Tuscan wheat-flour bread, made with natural yeast. The various types of bread you will find here are all produced using live mother yeast (sourdough) and soft Tuscan wheat flour, certified by the Celata Bakery of Pitigliano. Tuscan bread is naturally salt-free and prepared using part of the original mother dough, preserved and refreshed daily. In Tuscany, the sacredness of bread and the importance of not wasting it is reflected in traditional recipes like panzanella, acquacotta, ribollita, pappa al pomodoro, fettunta, black cabbage soup, and many more – often featured on our daily menu.
